Packing, moving, weddings, graduations.... phew its been a busy month so far! But in the midst of all the chaos I found the time to make this super simple, healthy delicious dinner. So much saucy goodness smothers a pan grilled chicken. Packed with Greek flavors, this one is a MUST for dinner tonight!

The other day I was reminiscing about New Orleans and its wonderful flavors... I decided to make a healthier version of their incredible gumbo! This came out so good, I really don't think you'll be missing the extra oil and fat!
Happy May! This month is looking to be one of the busiest months of 2014 for me, a wedding, 2 graduations, MOVING, yikes! One awesome thing that is happening is that my little brother is moving up to Orlando to go to my alma mater, UCF! I am stoked. To celebrate this exciting month and the weekend starting tomorrow, I have made this beautiful, refreshing mojito with muddled blueberries and mint and some organic sugar. It not only tastes amazing but its super low in calories! :)
