This is the product of me not having gone grocery shopping! It is sometimes a fun challenge to take random ingredients in your kitchen and turn them into a savory dinner surprise. I did have a little time, however, to stop at Publix and quickly pick up some Patagonian scallops, which are on sale for $6.99 per lb! This gives you about 100-150 scallops for only $6.99! Yea, I had to. And of course, most importantly, they are wild NOT farm raised.

I have made this a couple of times after testing out the vegan waters. Even though I didn’t stick to that lifestyle, I did stick to this soup! It is one of the easiest and most flavorful comfort foods you will ever have, I promise! Everyone that tries it can't get enough :P I have always loved foods that are full of flavor and Thai foods are all about it! The curry in this soup really tastes wonderful. Its so amazing that just a simple curry powder can create such a kick-ass soup. Serving this soup over jasmine rice, with some avocado slices and warm naan are is like a warm blanket on a cold winter day... how can you hold back the smile?
I love love love to cook, but I have been known to NOT be the best baker. Having to measure things exactly stresses me out! For me to type out a recipe to share is difficult, because I don’t follow them exactly in the kitchen. I have my seasonings and I just flavor and taste as I go. With baking, everything has to be so precise and timing is sooo important. I have had many burnt cookie disasters (why I end up just eating the dough, mmm).
