If someone asked me what would be my favorite ingredient in the world I would immediately say cheese. I LOVE LOVE LOVE cheese.... its a problem. Today I decided to go all out and create a perfect spring cheesy toasty. I don't exactly have precise measurements for everything, this is mostly a "flow with it" recipe ;) Go with your heart. My cheeses included brie, smoked apple gouda and fontina. For bread I chose a sourdough, fresh from the bakery. I wanted a little tang so I picked up some fresh organic blueberries. Other ingredients included: about 1 tsp of sugar, fresh basil, about 1/2 tsp of honey and about 1 tbsp Brummel and Brown buttery spread. I started by setting my grill pan to medium/high heat, adding a little of my butter spread then adding the blueberries and a pinch of sugar. I sauteed them until they were exploding with juiciness and they started to ooze out into the pan, then I set them aside. I use the same grill pan, without washing and set it back on the stove. I butter both sides of my pieces of sourdough and set them on the pan. Once the one side is warm, turn it over and now I add my cheeses, then the blueberries and then some thinly chopped fresh basil and a drizzle of honey. I close my grilled cheese with the other slice and slowly continue warming the sandwich. Make sure you have it on a low/medium setting, you want the cheese to fully melt in the middle without burning the bread! I keep turning it until I am satisfied and ready for plating.
I did drizzle a tiny bit of honey over the top of the whole grilled cheese but you can’t tell on here. My melty yumwich was perfection. The tartness and juiciness of the blueberries mixed with the sweetness of the honey, the smokiness of the gouda and the fresh basil just exploded in my mouth. Enjoyyyyyy!!! :)
