For my final Super Bowl dip, I made this creamy, spicy goodness AKA jalapeño popper dip. This is also a lighter version of the traditional thing. I wanted to keep it fairly healthy since I know we are all way too close to having made some serious health resolutions, and its just too soon to break them! Trust me though, no flavor or creaminess was harmed in the process. This was my boyfriend's favorite dip of all the ones I made! You can adjust the spicyness level by how much canned jalapeño you add. I like my spice, so I added 2 cans! Lets go through the steps together, shall we?

You really can't have Super Bowl without some kinda buffalo chicken something, can you!? This is a perfect way to bring some spice to that Super Bowl party. You can make it ahead of time and throw it in the oven to warm through once you get to your destination. This is a skinnier version since it has lighter cheese and fat free greek yogurt. Keep the healthy vibe going by decorating your dish with veggies but you might want to bring over some corn chips for scooping too! The pictures of this dip aren't as appealing as I wanted them to be, but I promise you, it tastes better than it looks ;) Just check out the ingredients!
Hummus. It's pretty difficult to NOT get addicted to this creamy dip. I know when I tried out the vegan thing for a month, it was my go-to snack. (omit the cheese if you are vegan!) Beans are a great source of protein and garbanzos are one of the tastiest of the bunch! For this years superbowl, I was thinking lets go dip-crazy... without breaking our New Years resolutions, right? This is my latin-fied version of the traditional hummus, I think the manly men at the party will enjoy it too! I also made some easy pita chips that I will recipe up for you. All in all this hummus really satisfied my bean craving. I do have to say something though.... that might not be the sweetest thing for a lady to say to you.... on her food blog of all places.... RINSE your canned beans THOROUGHLY! The liquid in the cans is no bueno and makes for an uncomfortable tummy and a smelly party. I'm sorry!!!! Just rinse. Please.
Its almost the weekend again, thank goodness! After so much time off during the holidays, it's hard not to get used to it. Last night was extra special for me because one of my best friends came back to Orlando with her husband, after being gone for 3+ months! So we welcomed them back with a little grill out at our house. We had some friends over, lit the fire-pit and a bunch of food was made. This bruschetta is what I welcomed our guests with. This is one of my go-to hors d'oeuvres. It's simple, fresh and full of flavor!
