Farmer's market here you come! This is such a yummy refreshing lunch, perfect for this summer. Loaded with roasted veggies, chickpeas and topped with goat cheese and some homemade balsamic vinaigrette.... you just can't go wrong. Bring it to the next BBQ you're invited to! For extra flavor, let it sit for a few hours or overnight :)

Thoughts of apartment hunting and moving fill my mind.... nothing like a flavor-packed bowl of fresh veggies with homemade vinaigrette to soothe my stress! This is a great recipe to incorporate your local grocery store's rotisserie chicken! If you want more wholesome ingredients add artichoke hearts and chickpeas :)
This year I decided to make a light Christmas dinner. In our family, from Peru, we are used to eating dinner at 8pm on the 24th and then staying up until midnight to celebrate with fireworks, champagne and the opening of gifts. This year we decided to do it Americana style and do our big dinner on the 25th around 3pm. So I thought some light dishes would be perfect for this! My caprese salad was one of them. Very simple yet so full of vitamins and flavor and cheese always makes veggies better if you're not to keen on them!
