Today was a short day at work but I spent most of it in traffic going from one errand to the next. So in the middle of the chaos I decided I wanted something fun and sweet to end my day on a happy note! These pretzels are sweet, crunchy and so cute! They make me feel like hosting a party :P And the best part is they're simple and almost therapeutic to make.

Oh I am sooo getting into the Christmas spirit. As we speak, I am drinking a skinny cinnamon dolce latte from Starbucks and I have the Candy Cane Christmas channel on Pandora. The Christmas tree has been up at our house since Thanksgiving weekend [not sure how I've kept it alive this long to be honest], the house is being prepped for holiday guests, and the temperature has dropped here in Florida, where the endless summer is a blessing a curse! A curse to me because I love the cold, I love snow and I love Christmas! Last night I wanted to make a simple cookie that was fairly HEALTHY! The next few weeks are going to be filled with non-healthy foods and I want to be in a "light Christmas eating mode" right now. These were perfect to satisfy that sweet craving!
It was my sweeties birthday yesterday and of course I asked him what kind of cake he wanted, anything at all. We had been watching the Food Network a few days before and Bobby Flay was making an incredible German chocolate cake and he said THATS MY CAKE! ... oh boy. I had no idea what went into making this decadent treat. It is certainly lots of steps if you want it to be completely home-made... but let me tell you, it was worth it. The cake itself came out SO moist and fluffy and the coconut/pecan frosting was a sweet buttery glaze. I finished off the cake with an easy chocolate ganache, some toasted coconut and pecans to decorate.
Balance is important no matter what you do in life. I absolutely love to cook and I love food, all food, from anywhere. I love to indulge and that means I sometimes have to sacrifice healthiness. But there are times when I feel the need to cook light and nutritious. What's the fun in cooking if you can't be creative?! What a fun challenge it is to figure out ways to make sinful sweets into good-for-you treats!

I love love love to cook, but I have been known to NOT be the best baker. Having to measure things exactly stresses me out! For me to type out a recipe to share is difficult, because I don’t follow them exactly in the kitchen. I have my seasonings and I just flavor and taste as I go. With baking, everything has to be so precise and timing is sooo important. I have had many burnt cookie disasters (why I end up just eating the dough, mmm).
I woke up Monday with a terrible case of the Mondays and thinking I really wanted a warm, sweet, comfort food. I thought about making a cake, but I am not much into icing. I thought about pie, but my favorite pie is Key Lime and thats cold. Then it hit me, I want a sweet bread and what better than banana bread as a perfect comfort dessert!
