Happy May! This month is looking to be one of the busiest months of 2014 for me, a wedding, 2 graduations, MOVING, yikes! Miami, Florida is home to so many amazing authentic Cuban restaurants. Sadly, Orlando has very few places that hit the spot. So I decided to make some at home! If you know good Cuban food, you know that these little babies are like gold. They are savory, crunchy and so satisfying but usually they are deep fried in oil. I healthy-fied them up by baking them and trust me, you won't be missing any of the grease! Especially because I made an incredible garlic mojo for dipping! I love when I can really toot my own horn, toot toot!

Cinco de Mayo is only a month away! But today is taco Tuesday and I'm ready for a cocktail. This mango-rita is made with the amazing pulp of a ripe mango and some other good stuff. I LOVE serving this during a BBQ and when doing taco night at the house!
Brace yourselves! Cinco de Mayo is coming up quick! This is the perfect SKINNY version of tacos that I die for. I want to eat them every day! I slow cooked the glorious herby chicken for 4 hours and then built my tacos with corn tortillas, queso fresco, pico de gallo and avocado. Seriously, so yummy. I think I declare every Friday, Cinco de Mayo! :)
